Aromatic, fluffy and fragile cake!

The cake is based on leavened dough with mayonnaise. It is very fragrant, and the core melts in your mouth. It is not very airy, but it is fluffy and moist.

INGREDIENTS (FOR 1 CHECK OF 550 GR):

For maya:

-2 g of dry yeast (or 6 g of fresh yeast)

For the dough:

-2 g of dry yeast (or 6 g of fresh yeast)

-55 gr of butter at room temperature

-40 gr of raisins (preventively soaked and dried) or candied fruit

For decoration:

METHOD OF PREPARATION:

1.Prepare the mayo. In a large bowl, in which you will knead the dough, mix the yeast and warm milk. Leave the ingredients for 2 minutes, then mix until smooth, add the flour and mix the mayonnaise, which has the consistency of dense fermented cream.

2. Cover the bowl with cling film and leave it in a warm place for 2-2.5 hours. When the mayonnaise increases in volume and begins to sag, you can begin to prepare the dough.

3. Mix the yeast with warm milk and leave it for a few minutes.

4. Lightly beat the eggs with salt and sugar, then add the vanilla sugar and mix once more with the whisk.

5.Mix the yeast until smooth, so that the yeast dissolves as much as possible. Add it to the egg mixture and mix well.

6.Mix the mayonnaise, then add the composition of liquid ingredients and mix until smooth.

7. Incorporate the flour in a few steps and kneading the dough. You may need more or less flour. The dough should be dense and sticky, it retains its shape, but is viscous. Knead until smooth.

8. Transfer the dough to the worktop, hit it on the table, spread it out and fold it. This is how kneading takes place, as a result of which the dough becomes less and less sticky and smoother. Knead the dough by hand for 15 minutes or for 5 minutes in the bread kneader and baking machine. The final dough does not stick to the hands and table, it is smooth and full of air bubbles.

9. Then take a piece of soft butter, grease the dough and incorporate the butter into the dough. Add the next piece of butter only after the previous one is well incorporated. Gradually, the dough will become very delicate and non-sticky. At the end, knead it for a few more minutes, and in total the dough must be kneaded for 30 minutes with your hands (with the kneader faster). Let the dough rest for 10 minutes.

10. Spread the dough in a countertop, sprinkle it with raisins, roll a roll, then a snail and knead the dough a little more, so that the raisins are evenly distributed.

11. Grease a bowl with plenty of oil, round the dough, put it in the bowl and leave it for 2 hours.

12. In 1 hour, the dough must be worked: fold it carefully and round it.

13.Prepare the shape. We use a 1l cake tin, with a height of 13 cm and a diameter of 8 cm. The cake will be taller, for this reason, we greased the form with oil and added baking paper to get the required height. The 1.5l shape would be perfect or you can bake 2 cakes smaller than about 250 gr each.

14. Carefully knead the dough, round it and bend the edges towards the middle. Put it in shape, cover it with plastic wrap and leave it for 1.5-2 hours, depending on the room temperature.

15. Beat the egg a little, pass it through a sieve, then grease the cake and sprinkle it with chopped almonds.

16. Bake for 40 minutes in the preheated oven to 190 ° C, lower level, top and bottom mode, without convection. If you are going to bake a few cakes, then it will take longer. If it browns too much, you can cover it with foil.

17. Remove from the oven and remove the form immediately. Let it cool on a grill. Sprinkle with powdered sugar and vanilla while hot.

It needs to cool for at least 2 hours. The cake is very fluffy and soft. It is kept fresh for a long time and even becomes tastier. You can add a little lemon peel and candied orange peel.


Colorful and fragrant lip balm

In a heat-resistant glass add the ingredients of phase A. The glass is placed on a water bath and kept approx. 15 minutes (on low heat) for hot maceration of alkanet powder, which will thus release a large part of the coloring substances. Stir occasionally.

After 15 minutes, remove the glass from the water bath and leave it to stand for 5 minutes, the time required to decant the alkanet powder. During this time do not mix.

Phase A is filtered as follows (see also the auxiliary images below):
Prepare a gauze in 4 layers, which is placed in the small tea strainer. Place the strainer on another heat-resistant glass. Pour phase A into the strainer, slowly, so that the remnants of the alkanet powder remain largely in the original beaker.

Add the beeswax over the filtered phase A and place the glass on the water bath until the wax melts. Meanwhile, stir.
The glass is removed from the water bath and the ingredients of phase C are added to the composition. Stir vigorously for approx. 15 seconds after which it pours, in a single movement, into the conditioner tube.

The tube filled with conditioner is left to rest until the conditioner is visibly solidified on the surface. Put the lid on and then place in the fridge for approx. 20 minutes.

The result is a fine, naturally flavored, emollient and nourishing conditioner. Gives a light coloring of the lips but without the specific coating given by a lipstick.

Options and explanations:

  • the previous version of the recipe contained beet powder, an ingredient that we no longer have on offer and which was difficult to work with, so for coloring we used another vegetable ingredient, namely alkanet powder
  • I used refined shea butter for this recipe, but you can work just as well with the unrefined one
  • Instead of almond oil you can use another vegetable oil, such as apricot, sesame, macadamia, jojoba.
  • any other aromatic extract can be used instead of the strawberry extract

Street food festivals are multiplying, my city will host at least two this summer. And it's not bad, because these festivals are a place where creativity is at home. I thought, however, that in the very wide and cosmopolitan culinary offer of these events, we no longer find anything Romanian. We find all kinds of burgers, all kinds of pizza, arrosticini, souvlaki, paella, Chinese noodles, piadinas. And many more, all tasty, all interesting to discover. And so the idea came to me to create a Romanian street food product, attractive enough for the public of these events. Eventually, my idea materialized into this Mitch Sandwich & # 8211 gourmet Romanian burger.

The name started with a pun, Mitch is an Anglo-Saxon male name that is pronounced & # 8230 small. I see this sandwich tasty enough to arouse the interest of foreign tourists who would visit our country. So I thought this spelling & # 8211 Mitch & # 8211 will help everyone pronounce the name of the dish correctly. Let them ask for it correctly, let us understand what they want. In addition, the world is already accustomed to sandwiches named after someone. Let's remember Sloppy Joe, Reuben Sandwich, Woody Allen and even Hugh Heffner!

The taste of mititei, which is so familiar to all of us, was quite difficult to associate with other flavors, so as not to lose its character. I thought a lot about what would fit. I chose: a smoky touch, the sweet taste and tenderness of baked peppers, a spicy note and more texture. I didn't exactly follow Corina's recipe, I just stole her idea and adapted it to what I had around the house. I suppose you will, too, for this is a wonderful recipe, but not at all nailed down to the fruits or spices used. It's just that I want you to put it into practice voluntarily, not out of necessity like I do.


Green sandwich


I've been tempted by this recipe since I first saw it in "Good Food" magazine, it looks so good that you wanted to eat the paper right. What is nice about this sandwich is the fact that starting from this recipe we can vary in extremely many combinations, it can't help but be delicious and, as summer is fast approaching, I can't help but recommend it as an ideal recipe. for a merry picnic at the bath. We need:
- buns or slices of wholemeal toast or rye
- spreadable margarine
- 3 tablespoons of humus per serving. I didn't have it at hand, so I didn't put it. But I was thinking what would be good, for example, pea paste with mint.
- 1 small avocado that we peel, cut it in half, remove the seeds, slice the pulp neither too thin nor too thick, sprinkle it with a little lemon juice so that it does not oxidize.
- A few arugula leaves? was the Good Food proposal, I put salad leaves from the most common. The idea of ​​putting a few dandelion leaves is not bad either, since they also help us with the silhouette, but it is also a very useful help for the functioning of the ball.
- 8? 10 sliced ​​cherry tomatoes
- Mayonnaise? that's what I had on hand but you can say which sauce will fit well. For a truly vegetarian sandwich, we can prepare avocado mayonnaise - it will definitely fit. I was thinking how well the famous tsatsiki sauce would fit with the refreshing yogurt, cucumbers and aromatic dill. I cut the bun in half, I spread margarine, if you have it, spread the hummus. Add the salad, avocado slices and tomatoes.

Season with pepper, pour the desired sauce, cover with the second slice of bun. And voila! :)))))))))
