Ingredients for making pancakes with liver

Dough:

  1. Milk 500 milliliters

Cooking pancakes with liver:

Step 1: prepare offal.


First of all, thoroughly wash all by-products under a stream of cold running water from blood clots and other contaminants. Then, in turn, lay out on a cutting board and continue the preparation. We look through each chicken liver and remove the gall bladder from it, if it is not removed, the dish will be bitter and the taste can no longer be corrected. From chicken hearts, we cut off excess fat and arteries - blood vessels.

We cut the beef lung into pieces up to 5-6 centimeters in size and cut out the remnants of the trachea and other airways from each.

Step 2: cook offal.


Then we lay out prepared hearts, liver, as well as light in separate deep pans, pour 4-5 centimeters above the offal level and put on high heat. After boiling, pour the boiling liquid from them, pour fresh cold and put it on the stove again. When the water starts bubbling again, we reduce the heat on all three rings to a level between the smallest and the middle and cover the pots with lids.

Offal is cooked at different times: chicken heart - 1 hour, liver - from 10 to 15 minutes, beef lung - 20-25 minutes. When everything is ready, with the help of a slotted spoon we transfer the products into one deep bowl and cool to room temperature.

Step 3: prepare pancake dough.


While the offal is being cooked, we cook pancakes. We put the eggs in a deep bowl, add sugar, salt, milk to them and, using a mixer, beat these ingredients until splendid at high speed. Then we reduce the speed of the kitchen appliance to an average level, pour sifted wheat flour into the resulting mixture, pour in vegetable oil and mix everything until a homogeneous consistency. The result should be a homogeneous batter without lumps.

Step 4: make pancakes.


Now put on a medium heat a dry frying pan and heat it. After 2-3 minutes, we collect a whole ladle of dough and pour it to the bottom of the heated dishes. Then we tilt it at an angle of 30 degrees so that the semi-finished flour spreads in a thin even layer, and again we send the pan to the stove. Fry the pancake for 2-3 seconds or until its edge becomes brown.
Then we pry it with a kitchen spatula, turn it on the other side and cook it for another 3-4 seconds. After that, we transfer the finished pancake to a large flat dish or cutting board and in the same way we fry the rest until the dough ends.

Step 5: prepare onions and boiled offal.


When the pancakes and offal are ready, you can start making the filling. To begin with, with a clean kitchen knife, peel the onion, rinse it under water and dry it with paper kitchen towels. We spread the vegetable on a cutting board and cut it with medium cubes up to 1 centimeter in size.

Next, install an electric or stationary meat grinder on the kitchen table with an average grid, take turns passing through it into a deep bowl chicken hearts, liver and beef lung and proceed to the next step.

Step 6: prepare the filling.


We put a clean frying pan on medium heat and pour the remaining vegetable oil into it. After a couple of minutes, dip the chopped onion there and simmer it until transparent for 2-3 minutes. After that, add the ground offal to the vegetable, to taste salt, ground black pepper and cook everything together 5-7 minutes. Strongly fry is not worth it, it is desirable that the filling is tender and juicy. When it reaches the desired consistency, remove the pan from the stove and allow the aromatic liver mixture to cool slightly.

Step 7: bring the dish to full readiness.


All the components of the dish are ready, it's time to start the final stage. We distribute pancakes on the countertop, in the center of each we put 1-1.5 tablespoons of the filling and fold them with envelopes or rolls. Then proceed as desired, or fry the resulting product in butter on both sides 2-3 seconds from each, or serve them immediately to the table.

Step 8: serve pancakes with liver.


Pancakes with liver served warm in portions on plates at the rate of 2-3 pieces each.

They are mainly served with sour cream, homemade cream, sauces based on milk, tomatoes or mayonnaise, but a salad made of fresh spring vegetables will also perfectly complement this great dish. Enjoy it!

Recipe Tips:

- Very often, onions are overcooked with carrots, and then ground offal is added;

- it is better to fry pancakes in a cast-iron or non-stick pan, if you are not confident in your dishes and are afraid that the dough will stick, it is better to grease the bottom with a piece of bacon or a thin layer of vegetable oil;

- does the pancake dough break? Add another chicken egg there and beat again;

- you can add any spices and dried herbs that are used during the preparation of meat dishes to the filling: coriander, cardamom, ground laurel, cloves, melissa, star anise, garlic granules, white or allspice;

- sometimes offal is boiled in salted water with the addition of spicy roots (parsley, dill, carrots), bay leaves and peas of black pepper;

- the first boiling water from under by-products must be drained! Thus, you will get rid of blood clots, nitrites and other dirt.
