Espresso Biscuits with Coffee


1. Preheat the oven to 180 °. Put baking paper in an oven tray. Chew the flour, baking powder and cocoa and pass them through a sieve.

2. In a bowl, mix the butter with the sugar until creamy. Then add the egg, vanilla extract and coffee and chew carefully.

3. Add flour, cocoa, baking powder (sieve above), one by one and chew.

4. Add the chocolate chips and chew.

5. Make balls, like nuts, put them on the tray and press lightly with a fork. Put them in the oven for 15 minutes.

6. Allow to cool and serve!

• 230 gr dark chocolate (quality)
• 60 gr butter
• 2 eggs
• 80 ml espresso without sugar
• 80 gr raw sugar
• 230 gr flour
• 1 lgta black cocoa
• 1 teaspoon baking powder
• 1 pinch of salt
• 2 lg rom
• 30 ml whiskey cream
• Organic orange peel
• white caster sugar and powder for rolling

Method of preparation:

First, melt the chocolate together with the butter. Add the hot coffee and mix, then leave to cool.
Mix the foam of the two eggs, adding raw sugar and rum.
Add melted and tempered chocolate. Next, the liqueur, sifted flour with baking powder, salt and cocoa.
Grate the orange peel (wash the orange with the untreated peel beforehand) and add it to the composition.
Once homogenized, the cookie dough is left to cool for at least 2 hours, ideal overnight.
After 2 hours or the next day, remove the dough from the refrigerator.
The oven is preheated to 170 degrees C.
Prepare a tray with baking paper.
From the composition, take it with the help of a teaspoon, give it a spherical shape and roll it in caster sugar, then in powdered sugar. Place each ball of dough in the pan.
Bake at 170 degrees C, maximum 8-10 minutes.
Remove and leave to cool in the pan. As they cool, they harden on the surface, and the core remains chocolate.
