Meatballs and ricotta / urda in tomato sauce

Put all the ingredients for the meatballs in a bowl and knead the mixture by hand until smooth. Be careful with the addition of salt, the Parmesan is already salty. Do not overdo it with mixing

With a wet hand, form round balls that you place in a large tray lined with baking paper, greased with oil, and put the tray in the oven, over high heat, for 20-25 minutes (it should start to take on a slight color). In the meantime, take care of the sauce. Melt the butter in a pan. Slice the mushrooms and dip them in the hot sauce. Cook them for 2-3 minutes then turn off everything with the wine. Let it boil for 2 minutes and add the tomato juice and the rest of the flavors - thyme, bay leaf, paprika, vinegar, sugar and chopped garlic clove. Match the taste of salt and pepper.

Dilute the starch in a tablespoon of water and add it to the sauce. Stir. Let it boil, on low heat, for a few minutes. Remove the meatballs from the oven, transfer them to the tomato sauce and put the tray in the oven for 20 minutes.

We served the dish with fluffy mashed potatoes and celery, prepared with butter and sour cream.

-1 kg. minced pork,
-4 eggs,
-2 boiled potatoes, not too big,
- a clove of garlic, not too big,

In a bowl put the minced meat, add the boiled potatoes given through a small grater, then the crushed garlic, eggs and spices.

Heat a frying pan, then pour oil and with wet palms make the meatballs and fry until nicely browned.
After they were fried, I put them in a pan and I put one on top of them S.O.S consisting of:

-3 tablespoons tomato paste,
-a teaspoon of flour,
-a teaspoon of sugar,
-2 bay leaves,
-a cup and a half of water.

In a bowl put tomato paste, flour, sugar and salt, mix well and then put water.
Put the whole mixture over the meatballs in the pan, add the bay leaves and let it simmer for a few minutes.

If the sauce thickens too much, add a little more water.

Serve with mashed potatoes, rice or, in my case, macaroni.
It's one of my son Dragos' favorite foods!
