Ingredients for making boiled pork in mayonnaise

Cooking boiled pork in mayonnaise:

Step 1: Cook the brine.

It is not necessary to soak the meat in brine before baking, but it is desirable, since one mayonnaise is not enough to get juicy, tender and equally tasty throughout the thickness of the boiled pork. The brine will “drag” the salt, taste and aroma of spices into the deepest layers.
We will cook it from water, lemon juice, garlic, sugar and salt. We heat two liters of water to a boil, add salt and sugar, mix. Then turn off the heat and leave the brine to cool.

Peel the garlic and rub on a fine grater. We send it to the pan, there we squeeze the juice from the lemon. All is ready.

Step 2: Cook the boiled pork in mayonnaise.

It is best to bake pork: back, ham or neck. Choose meat with fatty streaks, otherwise the boiled pork may turn out to be a bit dry.

We take a washed and dried piece of meat and make shallow transverse cuts. What are they needed for? Well, firstly, to help the marinade penetrate the fat layer. Secondly, to make the meat better baked. Thirdly, just for beauty.

In a pot, bowl or other suitable utensil, put the bag, in it is a prepared piece of meat.

In a separate container, mix the spices and sprinkle them with meat on all sides. Pour the cold pickle into the bag and tie it. We send pork to the refrigerator for at least a day. The larger the piece, the longer it takes to soak it.

We take out the meat from the bag, dry it with a paper towel and bandage it with twine. It is convenient to bake boiled pork on a wire rack or in the form that must be pre-coated with foil. In the latter case, you have to turn it over several times.
Lubricate the piece on all sides with mayonnaise, preferably home-made, and send it to the oven preheated to 180 degrees. Cooking time depends on weight (1 hour per 1 kg), in our case it will take two hours.

Remove the prepared boiled pork from the oven and leave to cool on the wire rack.

Step 3: Serve the boiled pork in mayonnaise.

Cut the boiled pork into slices and serve. Potatoes (boiled or baked), almost any vegetables, greens, salads are perfect for her. Cold boiled pork is served with horseradish sauce, pickled vegetables, adjika or mustard.
