Carrot roll ingredients
- Carrot 500 grams
- 4 eggs
- Sugar 1 teaspoon
- Russian mustard 1 tablespoon
- Butter 50 grams
- Curd 150 grams
- Sour cream 18% 2 tablespoons
- Green onion 1/2 bunch
- Radish 5-6 pieces
- Ground chilli to taste
- Ground black pepper to taste

Frying pan, kitchen knife, grater, spatula, baking tray (32x25 cm), baking parchment, deep plate, tablespoon, cutting board.
Cooking carrot roll:
Step 1: stew the carrots.
Peel the carrots, rinse and grate on a medium grater.
Heat butter in a pan and toss carrots into it, pepper (with hot pepper and black) and salt to taste. Stew everything, stirring, for 10 minutes. At the end of cooking, add mustard to the carrots and leave to cool.
Step 2: add the yolks to the carrots.
When the carrots have cooled, add egg yolks to it and mix well.
Step 3: add the proteins to the carrots.
Beat the whites separated from the yolks into a thick foam with a pinch of salt. Then mix gently with the carrot mass to obtain a uniform consistency.
Step 4: bake the carrot mass.
Preheat the oven to 180 degrees.
Cover the baking tray with parchment and lay the carrot mass on top. Level it so that it lies evenly.
Bake in a well preheated oven for 20 minutes.
After baking, remove the cake from the mold by carefully turning it downside down (so that the parchment is on top) on a kitchen towel. Wait 2 minutes and carefully remove the parchment.
Step 5: prepare the filling for the roll.
Mix the cottage cheese with sour cream, if the cottage cheese is too watery, add less sour cream. Grate radish here, chop green onions, add salt and pepper. Mix well to make a homogeneous paste.
Step 6: turn the carrot roll.
Apply the paste of radish and cottage cheese on the carrot cake in an even layer. Then carefully roll everything into a roll, squeeze and send to the refrigerator.
When the carrot roll is cooled, it will completely take the desired shape and it can be served to the table.
Step 7: serve the carrot roll.
Cut carrot roll into slices, garnish with radish and fresh herbs, and then serve and enjoy the taste of your appetizer. Great meal for the New Year's table, by the way!
