Cooking stewed cabbage with zucchini:
Step 1: prepare the cabbage.
Rinse the cabbage and remove the stale upper leaves from it. Divide the rest into two halves and cut out a hard stump from each, if this is not done, the stewed cabbage will be bitter, which will undoubtedly ruin the taste of the dish. The prepared head of the cabbage can only be chopped into thin strips using a special grater or an ordinary kitchen knife.
Step 2: prepare the zucchini.
Rinse the zucchini thoroughly, if they are young, just remove the stalk and cut the rest into small cubes. If your vegetables have already lay down and got a thick skin, first cut it with a special knife, then cut each zucchini into halves and use a tablespoon or the tip of a kitchen knife to cut the seeds. Then crumble the zucchini peeled inside and out into cubes.
Step 3: prepare the carrots.
Peel the carrots and rinse thoroughly with warm running water, then you can choose to grate it on a coarse grater or cut into small cubes.
Important: if the root crops you have chosen are young, then the peel can not be removed from them, since it is quite thin, but at the same time it contains a lot of useful nutrients.
Step 4: prepare the onion.
Peel the onions, cut off all the excess from them, and crumble the rest into small cubes or thin half rings, depending on what you like best.
Step 5: prepare the garlic.
Press the garlic cloves with the flat side of the knife blade, then peel them and cut them into very small pieces.
Step 6: prepare the greens.
Fresh herbs, I only have dill, rinse thoroughly, dry, and then chop it very finely.
Step 7: prepare the stewed cabbage with zucchini.
All the ingredients are prepared, it's time to start cooking the dish itself. First, fry the carrots and onions in a small amount of oil, stirring them all the time. Carrots will give a little color to the oil and fade, and the onion will become softer and gain transparency.
For lightly fried vegetables, pour the cabbage and eggplant, reduce the heat to medium power, pour a little more oil, cover the pan with a lid and simmer everything for 15-20 minutes. In this case, sometimes open and stir everything so that vegetables do not burn during cooking.
After the specified time has passed, zucchini and cabbage will be half ready. Open the pot and add bay leaves, tomato puree or pasta, as well as salt and black pepper. Stir everything and simmer still 10 minutes.
At the very end, when you already remove the cabbage stewed with zucchini from the heat, add fresh herbs and garlic to it, mix again, cover and let stand 5-10 minutesso that it is saturated with the aroma of the ingredients just added. Then the dish can be served at the table.
Step 8: serve the stewed cabbage with zucchini.
Stewed cabbage with zucchini is a completely independent dish that everyone likes, the exception is only those people who by no means can imagine a dinner without meat, especially for them, of course, it will not be superfluous to serve a couple of grilled sausages or fragrant cutlets. But in general, and without meat, the dish is delicious and satisfying.
