- 1 cup heavy whipping cream
- 1 cup whole-milk Greek-style yogurt
Combine 1 cup heavy whipping cream, 1 cup whole milk, and 1/2 cup sugar in heavy medium saucepan. Bring mixture to simmer, stirring until sugar dissolves. Whisk 3 large egg yolks and remaining 1/4 cup sugar in large heatproof bowl until blended. Gradually add hot cream mixture to yolk mixture and whisk until blended. Return mixture to saucepan and stir over medium-low heat until custard thickens slightly and coats back of spoon when finger is drawn across and instant-read thermometer inserted into mixture registers 170°F, about 3 minutes (do not boil). Pour custard through strainer set over medium bowl. Place bowl with custard in larger bowl filled halfway with ice and water. Whisk occasionally until custard is almost cool to touch, about 5 minutes. Remove bowl with custard from ice water. Whisk yogurt and pinch of salt into custard. Refrigerate custard until well chilled.
Transfer custard to ice cream maker and process according to manufacturer's instructions. Transfer yogurt ice cream to freezer container. Cover and freeze until ice cream is firm. DO AHEAD Can be made 3 days ahead. Keep frozen.

Greek yogurt ice cream is pretty awesome, but aren&rsquot these little crumpled looking cups the cutest thing you&rsquove ever seen? Revol so generously sent them to me to try out. They are definitely a conversation piece! You can actually bake muffins in them. My kiddos got a big kick out of their breakfast when I served their muffins in these unique cups. You could also use them for soup samplers, oatmeal, pudding and whatever else your heart desires.

This tastes more like cheesecake than yogurt. It is plenty rich with non-fat yogurt. However, the extra fat might make it stay softer in the freezer? I leave mine out at room temperature to soften for a couple minutes before serving. I don't make ice cream often, but that may change. This is a wonderfully tangy, but sweet, ice cream with a lovely texture. It was a perfect foil to the buttermilk cake with pear compote. I realized once I began making this that I had 2%, not whole, yogurt and that it was a 7 ounce container rather than a full 8 ounces. We didn't notice any missing richness. One word of warning: this recipe, along with the cake, entails several steps so be sure to plan ahead.
I have made this twice and love the taste. The only problem I have with it is that it's way too hard. I have to leave it out for at least 10 minutes before I can even serve it. Does anyone have any suggestions?

The ingredients you'll need
You'll only need a few simple ingredients to make this tasty dessert. The exact measurements are included in the recipe card below. Here's an overview of what you'll need:
Sweetener: For the smoothest texture, it's a good idea to use a powdered sweetener. Powdered erythritol works well. If you don't mind sugar, you can use powdered sugar, although white granulated sugar will also work. I often use stevia - I like stevia glycerite since it nearly eliminates any aftertaste.
Unsweetened cocoa powder: I like to use Dutch-processed cocoa powder. It's less acidic than natural cocoa powder.

- 4 tablespoons PB2 (powdered peanut butter)
- 1 cup unsweetened Vanilla almond milk
- 1 1/2 cup 0% Fage Greek yogurt
- 1 teaspoon vanilla extract
- 15-20 drops Vanilla Cream Sweet Leaf Stevia
|Place your ice cream maker base in the freezer overnight. This can also be made without an ice cream maker.|
|Combine all ingredients in the bowl of your stand mixer. Using the wire whisk attachment, mix until very well combined and mixture is smooth.|
|Pour in the ice cream maker and let churn for 15-20 minutes depending on your manufacturers instructions. ** If you do not have an ice cream maker, simple pour the mixture in a glass or tupperware container and freeze. **|
|Scoop contents out and place in a large storage container. Freeze until ready to use. You will need to temper the ice cream for 10-15 minutes before eating.|
