Today we present to you, dear lover of delicious dishes, a special recipe for "De Cracovia" cheesecake. This cake, with a tempting taste, is appreciated at the highest level by all lovers of cheese delicacies. The appetizing cake is totally different from the ones we are used to. The fine dough combines perfectly with the fluffy, aerated and flavorful filling. The process of preparing this cake is a little more thorough and requires some extra time, but it really is worth it.

INGREDIENTS

METHOD OF PREPARATION

1. Prepare the dough: cut the butter into cubes (150 g) and incorporate it into the flour. Add 150 g of sugar, 2 eggs and 1 teaspoon of vanilla sugar. Beat the ingredients thoroughly, using the mixer and knead the dough.

2. Wrap the dough in cling film, lightly flatten it and put it in the freezer for 30 minutes.

3. Remove the dough, cut 1/3 of it and refrigerate. Spread a thin layer of the rest of the dough. Take a 35 x 25 cm baking tray and line it with paper. Arrange the countertop in the tray. Drill the countertop using a fork. Place the tray in the preheated oven at 180 ° C for about 15-20 minutes, until the top is nicely browned. Baking time depends on each oven. 4. Prepare the cottage cheese. Combine in a bowl 180 g of butter with 140 g of sugar and 0.5 teaspoon of vanilla sugar. Beat the ingredients until you get a fine frothy meal.

5. Stirring the composition continuously, gradually add 8 egg yolks. Mix the composition after each egg yolk, then gradually add the cottage cheese. Homogenize the composition.

6. Beat 8 egg whites in a separate bowl, using the mixer, until you get a foam with strong tips, then add 50 g of sugar. Gradually incorporate the beaten egg whites into the cheese composition. Then add the starch and raisins (preventively scalded). Mix the composition.

7. Spread and even out the cheese composition over the entire surface of the baking tray.

8. Take the rest of the dough out of the fridge, spread a countertop and cut it into thin strips 1 cm wide. Arrange the strips on top of the grated cheese layer and grease them with the remaining yolk, slightly beaten preventively.

9. Put the tray back in the preheated oven at 170 ° C for about 1 hour. Baking time depends on each oven. Turn off the oven, open the door and leave the cake for 1 hour. Then take the cake out of the oven.

10. Prepare the icing: mix the lemon juice with the remaining egg white and 150 g of sugar, using the whisk. Grease the cake with icing.

1. In a saucepan, mix cold milk with butter, sugar and poppy seeds. Bring the composition to the boil over medium heat and mix well.

3. After incorporating the semolina, mix the composition once more and set it aside. It takes about 20 minutes to cool and become dense.

4. In a bowl, mix the cheese with the egg and a pinch of salt. Then pass the composition with the blender vertically, until it becomes homogeneous. Optionally, you can add a little vanilla extract.

5. Sift the flour, add cold butter cut into small pieces or given through a large grater, sugar and salt. If you have a food processor or chopper, use it.

6. Mix the cheese composition with the poppy seeds, using the vertical blender, until smooth.

7. Line the form with baking paper and transfer half or a little more of the dough to the crumbs. Flatten it well enough to get a countertop.

8. Add the cheese composition and sprinkle the filling with the remaining crumbs. The top layer should not be flattened. Bake in a preheated oven at 180 ° C for 40-50 minutes.
